I’ve been working on perfecting this Caramel Baileys Cheesecake recipe for a few months now, but never did get to take pictures of the final product because we kept eating it. I really want to share it with you though, because of all the cheesecakes I’ve made, this is the one that gets the most rave reviews. I was introduced to Baileys cheesecakes in Dublin. Every restaurant we went to had some version of a Baileys dessert- Baileys ice cream with brown bread, Caramel Baileys custard, cheesecake, pudding…. you name it, they had it. After eating my way through the city, I came home and attempted to make my own dessert combining all those amazing flavors. It had to be creamy, and rich, with almonds, caramel and the right amount of crunchy crust.
So here you are, my own recipe for the BEST Caramel Baileys Cheesecake. It’s perfect for a Christmas or New Years dessert!
