Easy Dinner Solution- Cucumber Greek Yogurt Salad

I know it’s practically Fall, but here in our corner of the world, it’s still really hot and muggy. Hot and muggy means easy, cool meals in my house! I am addicted to salads, especially considering we have a huge garden full of fresh produce right in the back yard. I’ve had great luck with growing cucumbers this year, and this Tzatziki Sauce inspired dressing has been my favorite use of them!

Greek Yogurt and Cucumber

The trick to making dressing with cucumbers is all about the prep. You have to dice them first, then salt them, and let them sit in a colander for a while. The salt will draw out the water, and then you can pat them down with a paper towel. If you don’t do this, then your dressing will come out too runny. For this recipe, we diced three small garden cucumbers, but if you are using some from the grocery, you may only need one.

Once you have drawn out some of the water, you can stick them into a blender or food processor and add:

One container Yoplait 100 Calorie Greek Yogurt (plain) (New! Get it from Walmart)

One tablespoon lemon juice

2 teaspoons minced garlic

1 teaspoon fresh dill

Salt and Pepper to taste

And that’s it. Just blend, and go! You can eat it right away, or cover it and let it rest in the fridge for a couple hours to let the flavors come out a bit more. I like to serve mine on top of a fresh salad with olives, hearts of palm, fresh tomato, more cucumbers and whatever else I have in the house to throw on it!
